[improvement] rename onEvent to onUiEvent (#1358) 
This PR:
- renames `onEvent` to `onUiEvent`
- adds docs for `onUiEvent` to the docs site
- splits the `EventsExample` into `UiEventsExample` and
`StoreEventsExample`
